In this blog, we will see how to make Mixed Vegetable Sabji
Ingredients
- Carrot
- Beans
- Potatoes
- Cauliflower
- Onion
- Green-Chillies
Preparation
- Wash and peel the skin of the vegetables as required
- Cut Vegetables into small chunks
- Arrange them aside for cooking
Cooking Preview
- In a Medium or Large Pressure cooker of required size
- Pour vegetable or cooking oil in the pan / cooker
- Keep the flame on Medium
- after 1-2 mins add cut Potatoes on one side and chilies on other side
- after 30secs stir them few times
- give approx. 1-2 mins for each hard vegetables like potatoes, cauliflower
- add cauliflower next
- add onions
- add carrot and beans
- add masalas: Turmeric 1 teaspoon, Chili powder or Kulambu Masala 1 table spoon, 2 table spoons of coriander powder
- stir well for 1-2 mins
- close the lid and wait for 1-2 whistle
- switch off the stove and keep the cooker aside to cool down and standing time
- after 5-10 mins open the lid and stir and take lid in such a way the water is not spilled on the sabji
- Now the vegetable sabji is ready, it is tasty and healthy with tawa rotis and rice with dal
Cooking Steps:
- Heat Oil:
- In a medium or large pressure cooker, pour 3 tablespoons of cooking oil.
- Heat the oil on medium flame for 1–2 minutes.
- Cook Potatoes and Green Chilies:
- Add diced potatoes to one side of the cooker and green chilies on the other.
- Stir gently after 30 seconds.
- Let the potatoes cook for 1–2 minutes until they start to soften slightly.
- Add Vegetables One by One:
- Add cauliflower florets and stir for 1–2 minutes.
- Next, add chopped onions and sauté until they turn translucent.
- Add carrots and beans, mixing everything well.
- Add Masalas:
- Sprinkle 1 teaspoon of turmeric powder, 1 tablespoon of chili powder (or Kulambu Masala), and 2 tablespoons of coriander powder.
- Stir the mixture thoroughly to coat all the vegetables with the masalas.
- Pressure Cook:
- Close the pressure cooker lid and cook on medium flame.
- Wait for 1–2 whistles (depending on the texture preference for vegetables).
- Cool and Open:
- Turn off the flame and let the pressure cooker cool down naturally for about 5–10 minutes.
- Open the lid carefully, ensuring no water from the lid spills into the sabji.
- Final Stir:
- Stir the sabji gently to mix well and adjust salt if needed.
